Steak Kumara

Ingredients 
(makes 2-3 portions)
2 Sirloin Steaks 
1 Sweet Potato
1 Red Pepper 
1 Red Onion
3 Cloves of Garlic
100g Chorizo 
1 tsp Chilli Flakes (optional or to taste)
1 tsp Cumin  
1 tsp of Salt
1/2 tsp of Ground Pepper
1 tbsp Olive Oil
100g of Grated Cheddar Cheese
50g of Grated Feta Cheese
1 Lime (or juice of)
1 400g Tin of Black Beans
1tbsp of Coriander (dried herbs)
1tsbp of honey (optional)

Step 1
Preheat the over to 220c
Line baking tin with silver foil such that it comes up the edges

Step 2
Chop Sweet Potato, Onion and Red Pepper into chunks and crush the Garlic
Place chopped vegetables and garlic into the baking tin
Slice and dice the Chorizo into small chunks and place into the baking tin
Sprinkle Chilli Flakes, Cumin, Salt and Pepper over the vegetables
Coat in Olive Oil and mix it all together so that everything is well coated

Bake uncovered for 30 minutes, mixing it halfway through

When done, remove from the oven and let stand for 5 minutes to cool a little

Step 3
Grate Cheddar Cheese and Feta Cheese
Mix grated cheeses and the drained black beans evenly into the baked sweet potato
Squeeze the juice of one lime over the mixture
Sprinkle Coriander over the mixture and then fold up the silver foil to create a parcel with all the mixture inside

Bake for a further 10 minutes

Step 4
Coat both steaks in a little vegetable oil
Heat a frying pan without oil and when hot, place the oiled steaks directly into the pan
Cook for 11/2 to 2 minutes each side for Rare to Medium Rare or 4-5 minutes each side for well done.
Cut steak into 2 to 3 pieces

Step 5
Divide the vegetable mixture into two and arrange each half in the center of a plate
Top with steak pieces and drizzle with honey
Sprinkle a little coriander over the dish
